  1. Create liquid brine put in plastic bag and tie marinate up to 24 hours.
  2. Rinse brine off and dry with paper towels. Inject some of brine slowly into meat. Move needle around left to right to inject liquid dont poke more holes.
  3. Rub olive oil all over the loin. Liberally rub dry rub all over meat.
  4. Heat up traeger to 250 degrees. Keep the temp at 250 degrees throughout the smoke. Smoke for 50 minutes per lb. Bring to 150 degrees for medium
  5. Let rest in a tin foil tent for 15 minutes. Slice and enjoy!
