Instructions to make BBQ Pork n’ Cheddar Burger:
- Prep and Make Aioli:
- Adjust rack to top position in oven and preheat to 425°.
- Halve, peel and thinly slice onion. Mice a few slices until you have about 2tbsp minced onion. - - Cut potatoes into 1/2” thick wedges. Halves potato buns.
- In a small bowl, combine mayonnaise with chipotle powder, and add to taste, then season with salt and pepper. Set aside.
- Caramelize Onion by melting 1tbsp butter in a large pan over medium heat. Add sliced onion and season with salt. Cook, stirring occasionally, until softened and lightly browned, 10 to 15 minutes. Lower heat and add a splash of water if onion begins to Brown to quickly.

- While the onions are cooking, tossed potatoes on a baking sheet with a large drizzle of oil, half the fry seasoning, salt and pepper. Roast on top rack until browned and tender, 20 to 25 minutes.
- Well the potatoes roast, and a large bowl combine pork, minced onion, remaining fry seasoning, half teaspoon of salt, and pepper. Form into two patties each slightly wider than the burger bun.
- Heat a drizzle of oil in a pan used for onion over medium high heat. At patties and cook until browned and cook through, 47 minutes per side. In the last few minutes tap each patty with cheddar cheese and cover pan until cheese melts. Remove from pan and set aside.
- Toast the buns Once you have added the cheddar to the patties. Spread the bottom buns with remaining barbecue sauce, spread top buns with chipotle aïoli, and then filled with patties and caramelized onions.
