- Start by browning the butter. (This is opnial however its a game changer.) Or melt it in the microwave. Let cool if not chilled the cookies may come out greasy.
- Sift the dry ingrediens and mix.
- Whisk the sugars, vanilla and brown butter together. Can be done y hand or in an electric mixer on meduim speed. Until the mixure is lighter in color. Mix for around 5 mins.
- Crack in the egg and egg yolk into the butter mixture. Mix till ligjt and fluffy.
- Mix in the dry ingredients. While being careful not to over mix.
- Fold in the chocolate chips and chopped chocolate. Feel free to add more or less chocolate as you want.
- Chill for 2 hours (optional but highly reccomended)
- Preheat the oven to 180°C or 355°F. And prepare pans lined with baking paper or silicon baking mats. (I tried both ways and got better result with the silicon mat, however it is opnional)
- Form cookie dough balls, place on the pan (optional add kosher salt on top, more chocolate)
- Bake for 10-12 mins or till slightly golden brown on the edges or on the bottom. (Cookies continue cooking even after coming out of the oven so dont worry if your cookies look undone they will continue cooking as they cool) Let cool for 8 mins in the pan then place on a cooling rack to cool completly.
- Taste best when its warm fresh out of the oven.
