  1. Heat the oven to 180C/160 fan/gas 4. Line a 12-hole cupcake tray with paper cases.
  2. Put the sugar(150g), butter(225g) and vanilla(1tsp) in a large bowl and beat with a whisk or wooden spoon until pale and fluffy. Add the 4 eggs one by one, beating each time you add an egg until all the eggs are in your mix.
  3. Sift the flour(225g) and baking powder(1tsp) with a pinch of salt and fold into the cake batter. Pour in the milk(4tbsp) and beat to loosen the mixture.
  4. Divide the cake batter equally between 12 cupcake case. Cook for 25-30 mins until the sponge is golden brown.
  5. To make the buttercream icing, whisk the softened butter(150g) until very soft. Then add the icing sugar(300g) and the vanilla extract(1tps). Whisk together and then add the milk(3tbsp). If wanting coloured, add the food colouring to the mixture.
  6. Take out your cupcakes and leave to cool. One they have cooled, use a spoon or a piping bag to pot your buttercream icing onto your cakes. Decorate your cupcakes how ever you wish and enjoy!
