Take off the heat. - To the skillet add the chicken, 1 can of red enchilada sauce, 1 1/2 cups of shredded cheese, cut yellow corn tortillas, 1 can of drained and rinsed black beans, and mix well. Top with remaining cheese and bake in a 375 degree oven for 30 minutes. Remove from the oven and top with the chopped green onions and minced cilantro.
