The ingredients needed to make Blueberry Rib-eye:
  1. Make ready 1 lb Rib-eye (cut into 8oz halves)
  2. Prepare Salt and pepper
  3. Take 2 tbsp oil, divided
  4. Prepare 1 shallot, sliced thin
  5. Make ready 1 cup red wine
  6. Take 6 oz fresh blueberries
  7. Make ready Juice and zest of ½ lemon
  8. Get 1 tsp fresh oregano
  9. Make ready 1 tbsp rubbed marjoram
  10. Get 4 tbsp brown sugar
Instructions to make Blueberry Rib-eye:
  1. Pour a tablespoon of oil into a pan and heat on high heat until it is smoking hot.
  2. Salt and pepper each rib-eye cut and grill them in the hot oil for 1 minute on each side.
  3. Remove it from heat and place it in a hot oven (about 400 degrees) for 5-10 minutes before letting it rest.
  4. Remove from pan and let rest on a plate.
  5. Set out all of the blueberry sauce ingredients.
  6. Sauté the shallots in a tablespoon of oil until translucent.
  7. Add the red wine and bring to a boil.
  8. Boil for approximately 2 minutes on high heat, until wine is reduced by half. Add the remaining sauce ingredients.
  9. Sauté on medium heat 5 minutes, using the back of your spoon to mash up some of the blueberries as they cook. You should be left with a glossy, thick sauce with chunks of blueberries.
  10. Cut half steak in to slices, and plates onto plate, drizzle a spoonful of the sauce around the sides, then drizzle a line of blueberries down the center.
  11. Serve and enjoy!
